Huge Local Challenge

So August 28, 2010 is closing in fast. It’s time for the local challenge to start. I’m a little nervous – I cannot lie. I don’t know if it’s something I can do 100% or not.  It is a celebration of local healthy choices that you make by eating food that is produced no more than 250 miles from your home. I have been struggling to make sure it was in a day’s drive (such as in light drive meaning 12 – 13 hours away max). So now I’m thinking about doing an entire month of 250 miles?? That means I need to find way more resources than I can think of right now.

So – lots of fresh to investigate.

In the mean time I am doing what I enjoy doing, cooking. Tonight we’re having some great chili. It’s local pastured beef – 1 pound. That with some taco seasoning, 2 large diced fresh tomatoes, 2 cups kidney beans, 1 cup garbanzo beans and 1 cup pinto beans. It is going to be so darn yummy. I love to top my chili these days with a little creme fraiche – a fine trick brought to me by my next door neighbor. Great comfort food to bring me some great comfort while I explore the possibilities.
