Noodles with Roasted Tomatoes, Eggplant and Basil

Dinner tonight was off the planned menu – and it was gobbled up fast by everyone including my four year old. It’s almost like a Ratatouille, for those of you in the know. You could substitute zucchini if you didn’t have eggplant, or if you just plain don’t like it. Or if you hate them both, use a little mushroom instead. Mushroom is always a good filler.

For this meal you need:

1 Medium Eggplant cut into little bits (about 1/2″ x 1/2″ is the size I like)

1 red onion, diced (I used mine from the Farmer’s Market)

2 Diced garlic cloves

3 tbsp olive oil

2 large organic tomatoes, cut up into chunks (also F.M)

1 cup of fresh basil, chopped (also F.M.)

1 tbsp balsamic vinegar

1 package of pasta  - we used spelt noodles tonight

Seasoning of salt and pepper if needed

You can either roast the veggies, or if you are really just running late, just throw them on the stove like I did tonight.

If you are roasting, preheat oven to 450 degrees. In a roasting pan put in the eggplant, onions, garlic and then toss with your EVOO until coated evenly. Season with a little salt, and let cook about 35 minutes (or until browned). Stir occasionally.

In a separate bowl, toss the tomatoes, chopped basil and balsamic vinegar. Let sit while veggies roast.

Put the pasta on about 15 minutes before you’ll pull out your veggies. That will give you time to get it all ready. When your pasta is done, drain.

In a saute pan put your tomato mix and heat up on medium a few minutes.

Add veggies to saute pan. Mix well.

Pour pasta into serving bowl and pour your mix of veggies out of the saute pan into the bowl. Mix well. Add some nice light cheese on top and serve.
