Homemade Strawberry Coconut Ice Cream


My husband’s birthday is this next week, and what a perfect chance to try out my new Ice Cream maker. So my next creation is going to be a yummy coconut ice cream with fresh organic strawberries… yum yum!




20 – 25 strawberries (mashed)

2 TBS. Vanilla

16 oz of coconut milk

Mix in a blender or by hand. Transfer contents of pot to a bowl and chill until cold. Process mixture in an ice cream maker according to manufacturer’s instructions then transfer to a container with a lid and freeze until firm, about 2 hours more.
