Well the bananas got shoved behind a few items, and yet were forgotten long enough to get brown. So today I’m making my daughter and my husband Banana Bread.
This dairy free banana bread recipe is based on this moist banana bread recipe. I have replaced some of the ingredients of course in my adaptation, and I am so happy to share it with you. It only takes the two cups of mashed bananas to make this a very moist banana bread. Today unfortunately I had enough to make two loafs.
2 c. overripe organic bananas, mashed
1/2 c. Spectrum Shortening
1/2 c. unbleached organic all-purpose flour
1/2 c. organic sprouted wheat flour
2 pastured organic eggs, beaten 0r to go vegan use 2/3 cups of unsweetened applesauce
1/2 c. Raw coconut crystals
1 tsp. baking soda
1 tsp. organic madagascar vanilla
1/2 t. sea salt
1. Preheat oven to 350 degrees.
2.Cream shortening and raw coconut crystals together. Add beaten eggs or applesauce and mix them in.
3. Add vanilla, baking soda, and salt.
4. Add mashed bananas and flour and mix everything well. There may be a few small banana lumps but that’s okay. If you prefer a perfectly smooth batter you can use a mixer.
5. Pour mixture into a loaf pan and bake at 350 degrees for about an hour – but may take up to 90 minutes. Done with a toothpick comes out clean.
